A simple recipe with Graviera

Graviera cheese with fritters


null½ teaspoon salt

120 gr. unsalted butter, cold and cut into pieces

130 gr. flour

4 large eggs

60 gr. graviera cheese

1 cup of water




  1.  Boil 1 cup of water, salt, and butter, stirring constantly.
  2. Remove from the heat and add the flour. Stir with a wooden spoon until a smooth dough is formed. Place back on the heat for 1 more minute, so that the dough becomes a bit dry.
  3.  Transfer the dough into a bowl. Add all the eggs and half the cheese, and beat using a blender until all ingredients are well combined.
  4.  Preheat the oven to 425˚F/ 220˚C.
  5.  Using a spoon or a pastry bag, shape the dough into small mounds on a shallow, non-stick pan. Sprinkle with the remaining cheese and bake for 20-25 minutes, or until brown.
